Asian-ish Ravioli – Decided to try making ravioli from scratch for this week’s cooktotheme challenge! We are supposed to use 3/6 ingredients which the group voted on. (ingredients in upper case are those forming part of the challenge)
Filling: Inspired by the dim sum siew mai, i stuffed my pasta with minced Chicken and Shrimp, shiitake, scallion, grated ginger, black garlic, white pepper and doenjang.
Sauce: sun-dried Tomatoes, Beef stock and a puree of roasted Kimchi and roasted Red Peppers. That’s right i used 4 (5 if you count the stock 😝) of the nominated ingredients! *pats myself*
Must have watched Ramsay making ravioli like 3 times before trying. I gotta say, this was a much better handmade pasta attempt than my first try! The noodles turned out with the perfect chew and was not tough at all. Didnt roll it another notch thinner because i was scared of bursting it but next time will definitely go thinner for ravioli. The sauce was also interesting, its like romesco meets … korean food? The peppers’ sweetness balances well with kimchi.
