Asparagus and Mint soup, Pan-fried Edamame, Charred Asparagus – Came across a bunch of beautiful asparagus at the vegetable store and couldn’t help but cop it (thick asparagus are a little less common here). Pureed down sauteed asparagus stems with spinach, stock, mint and juusst a touch of cream then topped it with shallow-fried edamame and crispy bacon bits for added texture. Of course, reserved the top spear parts in their full glory to sear on cast iron (blanching it prior to searing helps to lock in its colour). A very un-boring lunch! 😁
