Cauliflower Pizza (low-carb) – Have wanted to try this since I saw it on various shows (Chef Show, Really Dough) so here’s my attempt at it! Riced fresh cauliflower, sauteed it dry in a pan then mixed with egg and three cheeses to create the crust. Was delightfully surprised at how the crust managed to hold together somewhat well even when I didn’t do the cheesecloth-squeezing technique. Guess it’s more than just a health fad haha. The topping is a simple no-cook tomato sauce with prosciutto and more mozzarella. Yum, might do this more in the future considering that it’s slightly healthier and less time-consuming compared to a traditional yeasted base (although nothing can replace the unique taste of bread, really)!
