Coconut Tart – Continuing my streak of holidays baking, here’s a Coconut Cream Pie baked in a tart pan! Accidental vegetarian dish as I attempted to up the coconutiness, using all coconut cream and milk for the custard without dairy. The topping is an Italian Meringue which is lighter in calories and so much fluffier than the traditional whipped cream. The crust was me playing around with low carb / keto pie crusts – this recipe yielded a base that was surprisingly sturdy and sufficiently crunchy, almost like shortbread cookies, would defo do again!
