Eggnog Bread Pudding – Was feeling festive and had a bunch of leftover bread so made bread pudding with the flavours of eggnog (nutmeg and booze)! Many recipes use pre-made eggnog but i didnt have any on hand, but i figured it would be the same if i just added booze to my bread pudding mix since eggnog is a custard too.
For 250g of bread (probably can do with even less bread for more custard), my pudding base was:
3 eggs + 2 yolks
200ml whole milk
200ml heavy cream
120g sugar
1/4 cup rum
cinnamon, fair amt of grated nutmeg, pinch of salt
I literally just mixed all the ingredients, plopped sliced lightly toasted bread (to dry it) in, making sure to coat it all over, then baked it at 175C for 15-20min. The rum really comes through, which I quite enjoyed 😅
