Gyudon – [Collaboration] Another super quick meal that one can whip up in less than 30 minutes. Thinly sliced boneless beef short ribs and onions simmered in a savoury soup/sauce piled on Japanese rice, and topped with 63c onsen egg (sous vide). I made a little twist on the traditional gyudon: after the beef was cooked, I took out all the solids then thickened the sauce with xanthan gum. This created a more subtle texture/mouthfeel than if cornstarch was used. Because I used a fattier cut, some beef fat was rendered during the simmering and that added sooo much flavour to the sauce!
