Hotate Mentaiko Cheese – I get this all the time when i hit up a Japanese restaurant. Its shell-on scallops topped with a mentaiko-mayo-cheese mix (?? the exact recipe remains unknown to me) and usually grilled/torched!
Here’s my fast and easy reverse engineered version of it:
(for 4 med scallops)
– 1 Mentaiko Pod (50g approx)
– 50g kewpie mayo
– 40g cream cheese
Mix these three together, top the scallops with it.
Then, layer on a slice of cheddar/mozzarella if you so like (i honestly think its superb without added cheese too!)
Broil for 8-10 min. Yum.
