Lighter Tiramisu – Midweek dessert is a tiramisu which is generally easy if you use store bought Lady Fingers. Made it less caloric (~300 calories per serving) and soo fluffy using a lesser used method of incorporating a cooked italian meringue into the cream layer!

For 6 servings—
Ingredients:
300g mascarpone
100g light cream cheese
3 egg whites
1/2 tsp cream of tartar
60g caster sugar
60g erythritol
125ml water
2-3 tbsp sweet liqueur (marsala or kahlua works)
Pinch of salt
About 20 lady fingers
Strong coffee
Cocoa powder for dusting

Steps:
Whip egg whites until foamy, add cream of tartar and get to soft peaks. Boil sugars and water to softball stage (around 117 C apparently). While whipping eggs on medium speed, stream in piping hot syrup, keep whipping until stiff peaks form (should be totally opaque now) – Italian meringue done.

Beat mascarpone and cream cheese until whipped cream consistency. Add liquors and salt and mix to combine. Fold in cooked meringue gently.

Either dip (quickly) fingers in coffee or sprinkle coffee over them. Assemble: fingers-cream-fingers-cream. Let chill overnight before serving with a generous shower of cocoa powder!
