Mala-spiced Cauliflower Steak – The first cooktotheme challenge of the year was I decided that this cauliflower steak represented the ‘Balance’ theme well because:
(a) it is balanced in taste. The smoky hot and numbing cauliflower steak is offset by the creamy sesame cauliflower puree and mildly-sweet bulgogi mushroom which sits atop;
(b) it balances eating pleasure and health. Whereas cauliflower is like the poster boy of healthy eating, the high heat roasting it gives a very meaty taste which is far from diet food;
(c) it is vegan and veg-driven. A balance between consuming meat and being more environmentally-friendly in 2022!

Ok sorry for accidentally writing an essay plan. Anyway, if you’re interested here’s my version 1.0 Ma-La Spice rub: 1/2 cup (seedless) chili flakes, 2 tbsp cayenne, 1 tbsp sichuan pepper, 2 tsp cumin, 1/4 tsp coriander, 1/4 tsp five spice, 2 tbsp garlic, 1/2 tsp ginger, 2 tbsp toasted white sesame.
