Prawn Mee Fettuccine – Confession, I love fried prawn mee but dislike the sometimes overly alkaline taste of yellow noodles. Made a bastardized version using Italian pasta for dinner tonight 😂. Pork and shrimp stock is used to cook parboiled pasta so it absorbs all the flavour and simultaneously thickens the stock into almost a sauce. Homemade rendered lard is added to emulsify which makes all the difference. Used the by-product crispy bits I got from lard rendering as topping alongside poached seafood!
