Pumpkin Mac and Cheese – Well ok not really, the sauce itself isnt actually cheese but miso + mashed squash !! Here’s the secret formula to getting a thick sauce without cheese – equal parts milk, stock and raw pasta (in volume) makes a good base. After that, all i gotta to is add in 1 tbsp dissolved miso and mashed pumpkin. Topped with cheddar and broiled at the end to give it the impression that its all cheez. Also threw in chopped kale and rotisserie chicken as add ins. A surprisingly easy and healthy dish!
