Scotch Eggs – Brunch today was two giant babies in the form of soft-boiled eggs encased in sausage (mix of english breakfast style sausage and a spicier italian sausage) before being breaded with panko and shallow fried. Served with an edmamame and garlic scape hummus in lieu of the usual mayonnaise! Confession that I wasted a few eggs because i kept gaming the steaming time for them to preserve the runny yolks (aaand chef john was right – 6 minutes is the best). An indulgent way to kickstart the last day of the week, happy days! 😁
