Seafood Cioppino – Quick version of SF-style Cioppino. To my mirepoix, I added a little red bell peppers and then used ready-made pasta-sauce which already has herbs added for a quick tomato base. From there, I added shrimp stock I always have a frozen supply of to amp up the seafood flavour. Finished with celery leaves – don’t toss that! when eaten almost raw it adds a nice fresh and herbaceous note, evoo and a squeeze of lemon juice 😁
