Simple Roast Chicken – This year’s Christmas is not a large party but a small dinner for two. Keeping it simple but still wanted to have some holiday vibes so made a spatch-cock roast chicken – the chicken meat was so juicy and tender when cooked this way (!). Finished the meal with a homemade chocolate yule log cake … let’s just say it tastes better than it looks 😅 I am a terrible baker/decorator but decided to bake anyway for holiday’s sake hahah.
