Swedish Meatballs – I know this doesn’t look like the typical one-bite meatball we associate with IKEA but I like my balls big … so I made them way more substantial like Lion’s Head-style 😂. For the meatballs, I used 2:1 beef and pork, with minced leeks, panade and a secret ingredient of chicken liver pate which adds just the right amount of irony meatiness. Pan-seared the balls then finished it in simmering sauce. This method makes a better sauce cause I get to build up fond, but causes my balls to become pyramid-like rather than round, not that I mind! Paired it with a quick smashed cauliflower and homemade cranberry/raspberry jam (traditional lingonberries are near non existent in Singapore, as far as I know).
