Za’atar Roasted Cauliflower – Had this for yesterday. Its a simple but satisfying preparation of roasting an entire head of cauliflower, stem and all. Most recipes call for an hour of roasting but i trimmed this to half by first braising(more like steaming without a basket) for 5-10 mins in vegetable stock. Before going into the oven, slathered on a marinade made of olive oil, sherry vinegar, peri peri hot sauce, honey and importantly, za’atar!! I love the nuttiness and earthiness this pantry newcomer brings. Paired the cauli with roasted beetroot hummus.
